The other day, I was chit-chatting with a co-worker of mine, and she suggested I try to make some egg muffins. Yep, a muffin made out of eggs! I found the conversation interesting and went to her blog to check it out.
This past weekend I tried it; and booooeey was it good! Not too difficult to make, and made for some good family time after church. I washed mine down with coffee (my readers wouldn’t expect anything less) and juice. I used brocoli and sprinkled some cheese on top. When eating, a bit of salsa was good with it.
This may quickly become a staple in our home.
Ingredients:
8 eggs
4+ cooked bacon strips (We cooked ours in microwave)
An onion
1 cup of leftovers
1/2 cup of water
1/2 tsp garlic powder
1/2 tsp crushed/flaked peppers, or 1/2 of red & green pepper
1/4 tsp pepper
Pinch or two of salt
Instructions:
- Preheat oven to 350 degrees. While the oven is preheating, dice up the bacon, onion, leftovers and peppers. Also grease (I use a spray) up the muffin tin.
- Whisk all the ingredients together.
- Pour mixture evenly into muffin tin.
- Put in the preheated oven for 25 minutes.
- At the end of 25 minutes, turn on the broiler, and broil on high for about a minute or two; but don’t burn them!
- Enjoy.
