My eldest makes this really, really great tasting bread, it is called Pambangka (I have no idea of what it means, although I think it is related to Pan De Sal style of Filipino bread). This recipe requires a bread maker.
Ingredients:
- 1 1/2 cup of water (3 cups for double batch)
- 1/4 cup cooking oil (1/2 cup for double batch)
- 4 1/2 cups bread flour (9 cups for double batch)
- 1/2 cup sugar (1 cup for double batch – season for taste)
- 1/4 tea spoon salt (1/2 tea spoon for double batch)
- 1 rapid rise yeast (50% faster – 2 for double batch)
- bunch of pepperoni slices (optional)
- Mozzarella cheese slices (optional)
- Parmesan sprinkle (optional)
Actions:
- Using bread machine, add ingredients into the bread machine, starting with the water, oil, flour, sugar & salt. Lightly tap the pan until the ingredients have settled, then add the yeast.
- Select the “Dough” program on the bread machine, start the program.
- When the dough has doubled in size (or the program has finished), remove the dough from the bread pan.
- Divide the dough into 12 parts (24 for a double batch). Shape the dough into the Pambangka, adding the pepperoni slices and mozzarella cheese (quantity to taste).
- Pour Parmesan into a bowl. Roll each piece in the Parmesan and place the dough pieces onto a greased cookie sheet. Let them sit for 20 – 30 minutes for bread to take shape.
- Preheat oven to 350 degrees (while bread is taking shape).
- Bake for 15 minutes or until golden brown.
