Mexican Chicken – crockpot style

posted in: Cooking | 1

A co-worker of mine gave me this simple, yet great crock pot recipe. This makes a great dinner dish or a dip. She calls it Mexican Chicken and I believe it came from a Facebook page. I keep losing it, so decided to archive here. Anyway…here is the recipe:

Ingredients:

  • Frozen Chicken Breasts (4 – 6)
  • Frozen corn – large package
  • Salse Verde – 1 bottle/can
  • Taco seasoning – 1 package
  • Black beans – 2 or 3 cans
  • Cream Cheese – 1 brick

Actions:

  1. Place all ingredients except the cream cheese in the crockpot.
  2. Cooktime: Cook on High for 4 hours, or
cook on low for 7 hours (tastes better).
    — Mix occasionally —
  3. Place cream cheese into mix; cook an additional 1/2 hour.
